Ingredients
  

Salad
  • 6 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1/2 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice fresh
  • 1 teaspoon honey
  • 1/4 teaspoon black pepper freshly ground

  • Large bowl

Method
 

  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, chopped mint, and sliced red onion.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, and black pepper to make the dressing.
  3. Pour the dressing over the watermelon mixture and gently toss to combine.
  4. Cover the bowl and chill in the refrigerator for at least 10 minutes before serving.

Notes

You can add a pinch of salt if desired, but the feta cheese is already salty. For a spicier kick, add a pinch of red pepper flakes to the dressing.
