- In a small bowl, whisk together chia seeds, almond milk, and maple syrup. Let sit for 5 minutes, then whisk again to break up any clumps.
- Cover the bowl and refrigerate for at least 2 hours, or until thickened into a pudding consistency.
- While the chia pudding chills, blend the cubed watermelon until smooth. You can strain it if you prefer a smoother texture.
- To assemble the parfaits, spoon a layer of chia pudding into the bottom of each serving glass.
- Top with a layer of blended watermelon.
- Repeat the layers until the glasses are full, ending with a layer of watermelon.
- Garnish with fresh berries and chopped mint, if desired.
Notes
You can adjust the sweetness of the chia pudding to your preference. For a thicker pudding, use slightly less milk. For a thinner pudding, add a little more milk.
