Watermelon Berry Fruit Pizza

Ingredients
  

For the Base
  • 1 large watermelon about 12-14 inches in diameter, rind removed
For the Topping
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup mixed berries such as blueberries, raspberries, sliced strawberries

Method
 

  1. Slice the watermelon into 1-inch thick rounds. You should get about 2-3 rounds from one large watermelon.
  2. Place one watermelon round on a large serving platter. This will be your pizza crust.
  3. In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Spread the cream cheese mixture evenly over the watermelon round, leaving about a 1/2-inch border.
  5. Arrange the mixed berries over the cream cheese topping.
  6. Repeat with remaining watermelon rounds and toppings if making multiple pizzas.
  7. Slice and serve immediately, or chill for up to 1 hour before serving.

Notes

For best results, use a firm, ripe watermelon. Pat the watermelon dry before spreading the cream cheese to prevent excess moisture.
