- Slice the watermelon into 1-inch thick rounds. You should get about 2-3 rounds from one large watermelon.
- Place one watermelon round on a large serving platter. This will be your pizza crust.
- In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Spread the cream cheese mixture evenly over the watermelon round, leaving about a 1/2-inch border.
- Arrange the mixed berries over the cream cheese topping.
- Repeat with remaining watermelon rounds and toppings if making multiple pizzas.
- Slice and serve immediately, or chill for up to 1 hour before serving.
Notes
For best results, use a firm, ripe watermelon. Pat the watermelon dry before spreading the cream cheese to prevent excess moisture.
