Ingredients
  

For the Sandwich
  • 8 slices sourdough bread
  • 6 tablespoons butter, softened divided
  • 3 tablespoons mayonnaise
  • 3 tablespoons manchego cheese, finely shredded
  • 1/8 teaspoon onion powder
  • 4 ounces brie cheese, rind removed
  • 1/2 cup sharp white cheddar, shredded
  • 1/2 cup Monterey jack, shredded
  • 1/2 cup gruyere, shredded

Equipment

  • Griddle
  • Spatula

Method
 

  1. In a small bowl, combine the shredded cheeses, mayonnaise, and onion powder. Mix well.
  2. Spread 1 tablespoon of softened butter on one side of each slice of bread.
  3. Place two slices of bread, butter-side down, in a cold skillet or on a griddle.
  4. Divide the cheese mixture evenly between the two bread slices.
  5. Top with the remaining two slices of bread, butter-side up.
  6. Cook over medium heat for 5-7 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  7. Slice in half and serve immediately.

Notes

For an even crispier crust, you can use a combination of butter and mayonnaise on the outside of the bread.
