Summer Pasta Salad with Herbs

Ingredients
  

For the Salad
  • 12 ounces Pasta such as rotini, fusilli, or penne
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red onion finely chopped
  • 1/2 cup Fresh parsley chopped
  • 1/4 cup Fresh basil chopped
  • 1/4 cup Fresh dill chopped
For the Dressing
  • 1/3 cup Olive oil
  • 3 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Equipment

  • Large pot
  • Colander
  • Large mixing bowl
  • Knife
  • Cutting board

Method
 

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, and red onion.
  3. In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  4. Pour the dressing over the pasta mixture. Add the chopped parsley, basil, and dill.
  5. Toss gently to combine all ingredients. Serve immediately or chill for later.

Notes

You can add other vegetables like bell peppers or corn. For a protein boost, add grilled chicken or chickpeas.
