- In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Set aside.
- In a large bowl, combine spinach, sliced strawberries, red onion, and toasted pecans.
- Pour the dressing over the salad and toss gently to coat.
- Sprinkle with crumbled feta cheese.
- Chill for 10 minutes before serving.
Notes
You can substitute walnuts for pecans or goat cheese for feta if desired. This salad is best served fresh.
