Ingredients
  

For the Salad
  • 5 oz fresh spinach washed and dried
  • 1 pint fresh strawberries hulled and sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup pecans chopped and toasted
  • 2 oz feta cheese crumbled
For the Dressing
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Equipment

Method
 

  1. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Set aside.
  2. In a large bowl, combine spinach, sliced strawberries, red onion, and toasted pecans.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Sprinkle with crumbled feta cheese.
  5. Chill for 10 minutes before serving.

Notes

You can substitute walnuts for pecans or goat cheese for feta if desired. This salad is best served fresh.
