Ingredients
  

For the Beef and Potatoes
  • 2 lbs beef chuck roast cut into 1-inch pieces
  • 1.5 lbs baby potatoes halved or quartered if large
  • 1 large onion chopped
For the Garlic Butter Sauce
  • 1 cup beef broth
  • 1/2 cup butter
  • 6 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
For Serving
  • 2 tbsp fresh parsley chopped

Method
 

  1. Place the beef, potatoes, and onion in the slow cooker.
  2. In a separate bowl, whisk together the beef broth, butter, minced garlic, thyme, salt, and pepper.
  3. Pour the sauce mixture over the beef and potatoes in the slow cooker.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
  5. Stir before serving. Garnish with fresh parsley.

Notes

You can thicken the sauce at the end by mixing 1 tablespoon of cornstarch with 2 tablespoons of cold water and stirring it into the slow cooker on high for the last 15-20 minutes of cooking.
