Method
- Place the beef, potatoes, and onion in the slow cooker.
- In a separate bowl, whisk together the beef broth, butter, minced garlic, thyme, salt, and pepper.
- Pour the sauce mixture over the beef and potatoes in the slow cooker.
- Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
- Stir before serving. Garnish with fresh parsley.
Notes
You can thicken the sauce at the end by mixing 1 tablespoon of cornstarch with 2 tablespoons of cold water and stirring it into the slow cooker on high for the last 15-20 minutes of cooking.
