- Preheat oven to 350°F (175°C). In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles. Drain the grease.
- In a large bowl, beat the eggs. Add the onion, green pepper, salt, garlic powder, and pepper. Stir in the cooked sausage and cheese.
- Spoon the mixture by 1/3 cupfuls into 12 greased muffin cups. Bake until a knife inserted in the center comes out clean, about 20-25 minutes.
