Ingredients
  

For the Casserole
  • 1 pound sliced bacon diced
  • 1 medium sweet onion chopped
  • 6 large eggs lightly beaten
  • 4 cups frozen shredded hash brown potatoes thawed
  • 2 cups shredded cheddar cheese
  • 1-1/2 cups cottage cheese 4%
  • 1-1/4 cups shredded Swiss cheese

Method
 

  1. Preheat your oven to 350°F (175°C). In a large skillet, cook the diced bacon and chopped onion over medium heat until the bacon is crisp. Drain off any excess fat.
  2. In a large bowl, combine the lightly beaten eggs, thawed shredded hash browns, cheddar cheese, cottage cheese, and Swiss cheese. Stir in the cooked bacon and onion mixture.
  3. Transfer the mixture to a greased 13x9-inch baking dish.
  4. Bake uncovered for 35-40 minutes, or until a knife inserted into the center comes out clean.
  5. Let the casserole stand for 10 minutes before cutting and serving.
