Quick Sausage and Cream Pasta

A fast and simple pasta dish with a creamy sausage sauce, perfect for busy weeknights.

Ingredients
  

For the Sauce
  • 1 package Pasta
  • 2 tbsp Olive Oil
  • 1/2 Onion chopped, optional
  • 1 pkg Jimmy Dean Regular bulk sausage
  • 6 oz Tomato Paste
  • 1 cup Beef Stock or 1 cup water with bouillon paste
  • 1 cup Light Cream heavy cream also works
  • to taste Salt
  • to taste Pepper
Optional Topping
  • as needed Parmesan Cheese freshly grated

Equipment

  • Large pot
  • Skillet

Method
 

  1. Heat olive oil in a skillet over low heat. Add chopped onion and cook until soft. If using onion, add the sausage meat and fry until cooked through. Drain off excess fat if desired.
  2. Stir in the tomato paste and beef stock. Season with salt and pepper. Simmer over low heat for about 10 minutes.
  3. Add the light cream to the sauce and stir to combine. Continue to simmer gently.
  4. Meanwhile, cook your pasta in a pot of salted boiling water according to package directions. Drain the pasta.
  5. Combine the drained pasta with the prepared sauce. Stir well to coat.
  6. Serve immediately, topped with freshly grated Parmesan cheese if desired.

Notes

This recipe is easily scalable for meal prep. The sauce can be made ahead and stored in the refrigerator. Reheat gently before combining with freshly cooked pasta.
