Quick Grilled Cheese with Pickles

A fast and easy grilled cheese sandwich with a tangy pickle twist, perfect for busy weeknights.

Ingredients
  

For the Sandwiches
  • 8 slices sourdough bread
  • 3 tablespoons mayonnaise
  • 1 1/2 cups shredded havarti cheese
  • 1/2 cup chopped dill pickles
  • 3 tablespoons butter, softened divided

Method
 

  1. Spread mayonnaise evenly on one side of each slice of bread.
  2. In a bowl, combine the shredded cheese and chopped pickles. Divide the cheese mixture evenly among 4 of the bread slices. Top with the remaining 4 bread slices, mayonnaise side down.
  3. Spread half of the softened butter evenly over the tops of the sandwiches. Heat a large skillet over medium heat.
  4. Place the sandwiches, buttered side down, into the hot skillet. Spread the remaining butter evenly over the tops of the sandwiches. Cook for about 4 minutes, until the bottom side is golden brown and toasted.
  5. Flip the sandwiches and cook for about 4 more minutes, until the cheese is melted and the bread is toasted on both sides. Serve immediately.

Notes

This recipe can be customized with different types of bread and cheese.
