Method
- Spread mayonnaise evenly on one side of each slice of bread.
- In a bowl, combine the shredded cheese and chopped pickles. Divide the cheese mixture evenly among 4 of the bread slices. Top with the remaining 4 bread slices, mayonnaise side down.
- Spread half of the softened butter evenly over the tops of the sandwiches. Heat a large skillet over medium heat.
- Place the sandwiches, buttered side down, into the hot skillet. Spread the remaining butter evenly over the tops of the sandwiches. Cook for about 4 minutes, until the bottom side is golden brown and toasted.
- Flip the sandwiches and cook for about 4 more minutes, until the cheese is melted and the bread is toasted on both sides. Serve immediately.
