Ingredients
  

  • 1 tablespoon brown sugar
  • 1.5 teaspoons kosher salt
  • 1.5 teaspoons sweet paprika
  • 1.5 teaspoons garlic powder
  • 0.5 teaspoon freshly cracked black pepper
  • 1 (2-pound) salmon fillet
  • 1 tablespoon extra-virgin olive oil

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the brown sugar, kosher salt, sweet paprika, garlic powder, and black pepper. Mix well.
  3. Pat the salmon fillet dry with paper towels. Place the salmon, skin-side down, on the prepared baking sheet.
  4. Brush the salmon evenly with the extra-virgin olive oil.
  5. Sprinkle the spice mixture evenly over the top of the salmon.
  6. Roast the salmon in the preheated oven for 12-15 minutes, or until it is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillet.
  7. Serve immediately with your favorite seasonal veggie sides.

Notes

For a crispier skin, you can broil the salmon for the last 1-2 minutes of cooking. Ensure you watch it closely to prevent burning.
