Peach Crumble Bars with Buttery Oat Topping

Ingredients
  

For the Crust and Topping
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup granulated sugar
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter, melted
For the Peach Filling
  • 4 cups fresh or frozen peaches, sliced if using frozen, do not thaw
  • 0.25 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 0.5 teaspoon cinnamon

Method
 

  1. Preheat your oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, combine the flour, rolled oats, 1 cup granulated sugar, baking soda, and salt for the crust and topping. Pour in the melted butter and mix until the mixture is crumbly.
  3. Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, gently toss the sliced peaches with 0.25 cup granulated sugar, cornstarch, lemon juice, and cinnamon. Spread the peach mixture evenly over the crust.
  5. Sprinkle the remaining crumble mixture evenly over the peach layer to create the topping.
  6. Bake for 30-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  7. Let the bars cool completely in the pan before cutting into 12 bars.

Notes

You can add a pinch of nutmeg to the crumble mixture for extra flavor. If you prefer a softer crumble, use slightly less butter. These bars store well in an airtight container at room temperature for up to 3 days.
