- Cook orzo in a large pot of boiling salted water according to package directions. Drain well.
- Heat olive oil in a large cast iron skillet over medium heat. Add garlic and onion. Cook, stirring often, until onions are translucent, about 2-3 minutes.
- Whisk in flour until lightly browned, about 1 minute.
- Gradually whisk in milk. Cook, whisking constantly, until slightly thickened, about 3-4 minutes.
- Stir in spinach until wilted, about 3 minutes.
- Stir in Parmesan until melted, about 1 minute.
- Stir in the cooked orzo. Season with salt and pepper to your taste.
- Serve immediately.
