For the Chicken
  • 1 lb boneless skinless chicken thighs or breasts Thighs offer more flavor and moisture, while breasts are a leaner choice.
  • Salt and pepper to taste
  • Oil for sautéing, optional
For the Rice
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce honey BBQ recommended

Method
 

  1. Season the chicken thighs or breasts with salt and pepper.
  2. Heat a large skillet over medium heat and add a splash of oil. Once hot, sear the chicken for 5–7 minutes per side until golden. Do not fully cook the chicken; it will finish in the rice.
  3. Stir in the rice and toast it for about 1 minute.
  4. Add 2 cups chicken broth, scrape the bottom of the pan, and bring to a light boil.
  5. Stir in ½ cup of BBQ sauce evenly.
  6. Cover the skillet, reduce heat to low, and let it simmer for 20–25 minutes, until the rice is tender and the chicken is cooked through.
  7. Remove from heat, fluff the rice, and slice or shred the chicken as desired. Serve immediately.
