- Place the sirloin steak pieces into a large bowl. Season with kosher salt and black pepper. Toss to combine.
- Heat a large skillet over medium-high heat. Add vegetable oil and heat until very hot. Brown the steak pieces in batches, searing them to give them color. Add more oil to the pan if needed. Do not cook them all the way through.
- Add the seared steak to a 6-quart slow cooker. Add the sliced sweet onion and sliced garlic. Stir gently.
- Pour in the beef stock. Sprinkle the au jus gravy mix evenly over the top. Arrange the sliced butter over the top.
- Cover the slow cooker and cook on high for 3-4 hours or on low for 6-8 hours. Stir once an hour if possible.
- Serve the beef bites with mashed potatoes, egg noodles, or rice.
