Ingredients
  

For the Salad
  • 4 ripe peaches halved and pitted
  • 5 oz arugula or mixed greens
  • 4 oz goat cheese crumbled
  • 1/4 cup pecans toasted, optional
For the Honey-Lime Dressing
  • 3 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Lightly brush the cut sides of the peaches with a little olive oil. Grill for 3-5 minutes per side, until grill marks appear and peaches are slightly softened.
  3. While the peaches are grilling, prepare the dressing. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined.
  4. Once grilled, let the peaches cool slightly. Slice them into wedges.
  5. In a large bowl, combine the arugula, grilled peach wedges, crumbled goat cheese, and toasted pecans (if using).
  6. Drizzle the honey-lime dressing over the salad and toss gently to combine.
  7. Serve immediately.

Notes

You can substitute feta cheese for goat cheese if desired. For a different flavor profile, try adding a sprinkle of fresh mint or basil to the salad.
