Gourmet Blueberry Grilled Cheese

Ingredients
  

For the Sandwich
  • 2 strips maple smoked bacon or regular
  • 2 slices multigrain bread
  • 2 tbsp mayonnaise
  • 2 tbsp blueberry jam
  • 1/2 cup cheddar & mozzarella cheese shredded (50g)
  • 1/2 green jalapeno thinly sliced
  • 2 tbsp salted butter or margarine

Method
 

  1. Fry the bacon over a medium-high heat until crisp. Remove from the pan and set aside.
  2. Spread mayonnaise on one side of each slice of bread. Top the mayonnaise on one slice with blueberry jam.
  3. On the jam-covered slice of bread, sprinkle half of the shredded cheese. Layer the cooked bacon and sliced jalapeno over the cheese. Sprinkle the remaining cheese on top.
  4. Place the other slice of bread on top, jam-side down, and gently press the sandwich together.
  5. Heat a frying pan over medium heat. Melt 1 tbsp of butter in the pan.
  6. Butter the top side of the sandwich. Place the sandwich in the hot frying pan, butter-side down. Butter the new top side of the sandwich.
  7. Cook for a few minutes until the bread begins to toast. Using a spatula, gently flip the sandwich.
  8. Press down gently and cook for a few more minutes. Continue to flip the sandwich every 30 seconds, pressing down, until the bread is golden brown and the cheese is fully melted.
