- Fry the bacon over a medium-high heat until crisp. Remove from the pan and set aside.
- Spread mayonnaise on one side of each slice of bread. Top the mayonnaise on one slice with blueberry jam.
- On the jam-covered slice of bread, sprinkle half of the shredded cheese. Layer the cooked bacon and sliced jalapeno over the cheese. Sprinkle the remaining cheese on top.
- Place the other slice of bread on top, jam-side down, and gently press the sandwich together.
- Heat a frying pan over medium heat. Melt 1 tbsp of butter in the pan.
- Butter the top side of the sandwich. Place the sandwich in the hot frying pan, butter-side down. Butter the new top side of the sandwich.
- Cook for a few minutes until the bread begins to toast. Using a spatula, gently flip the sandwich.
- Press down gently and cook for a few more minutes. Continue to flip the sandwich every 30 seconds, pressing down, until the bread is golden brown and the cheese is fully melted.
