Method
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed potatoes with 2 tablespoons of olive oil, minced garlic, oregano, salt, and pepper. Spread the potatoes in a single layer on a baking sheet.
- Roast the potatoes for 20 minutes.
- While the potatoes roast, toss the chicken thighs with the remaining 2 tablespoons of olive oil, minced garlic, oregano, salt, and pepper in the same bowl.
- After 20 minutes, remove the baking sheet from the oven. Add the seasoned chicken thighs to the baking sheet with the potatoes, ensuring everything is in a single layer.
- Return the baking sheet to the oven and roast for another 20-25 minutes, or until the chicken is cooked through and the potatoes are tender and browned.
- Remove from the oven and sprinkle the grated Parmesan cheese and chopped fresh parsley over the chicken and potatoes.
- Serve immediately.
Notes
You can add other vegetables like broccoli florets or bell pepper strips to the baking sheet during the last 15-20 minutes of cooking.
