Ingredients

For the Garlic Butter Spread
  • 4 tablespoon unsalted butter, softened
  • 1 tablespoon mayonnaise
  • 3 cloves garlic, very finely minced
  • 1 tablespoon Italian parsley, finely chopped
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
For the Grilled Cheese
  • 4 slices sandwich bread sourdough recommended
  • 1 cup shredded cheese Gruyere, Colby Jack, and smoked Cheddar blend recommended

Equipment

  • Non-stick skillet
  • Box grater

Method

  1. In a bowl, mix the softened butter, mayonnaise, minced garlic, and chopped parsley until evenly combined. Season with salt and pepper to taste.
  2. Spread the garlic butter mixture on one side of each slice of bread. Place the shredded cheese on one slice, then top with the other slice, buttered side up.
  3. Heat a non-stick skillet over medium-low heat. Cooking on medium-low heat allows the cheese to melt completely before the bread burns.
  4. Place the sandwiches in the warm skillet. Cook for about 5 minutes per side, until the bread is golden brown and the cheese is fully melted. You may need to flip them a few times and gently press down to ensure even cooking and melting.
  5. Slice the grilled cheese sandwiches and serve immediately while warm and melty.

Notes

For the best results, freshly grate your cheese. It melts more effectively than pre-shredded cheese. If using pre-packaged cheese slices, choose varieties that melt well, such as American or Colby Jack. Cooking over medium-low heat is crucial to prevent the exterior from burning before the cheese melts. Flipping the sandwiches a few times helps distribute heat evenly. Use a non-stick skillet or griddle to prevent sticking.
Substitutions and Variations:
Cheese: Swiss, Monterey Jack, Havarti, Gouda, or Muenster.
Bread: Sandwich bread, sliced brioche, or sourdough.
Add-ins: Roasted garlic cloves (instead of minced garlic), deli meat, caramelized onions, or sliced apples.
