Fresh Peach Salsa with Cinnamon Chips

Ingredients
  

For the Cinnamon Chips
  • 6 medium flour tortillas
  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
For the Peach Salsa
  • 3 cups chopped fresh peaches about 3-4 medium peaches
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice freshly squeezed
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the melted butter, granulated sugar, and cinnamon.
  3. Brush both sides of the flour tortillas with the cinnamon-sugar mixture.
  4. Cut each tortilla into wedges (like a pizza).
  5. Arrange the wedges in a single layer on a baking sheet.
  6. Bake for 8-10 minutes, or until golden brown and crispy. Let them cool.
  7. While the chips are baking, prepare the salsa. In a large bowl, combine the chopped peaches, red onion, cilantro, lime juice, minced jalapeno (if using), and salt.
  8. Gently stir to combine all ingredients.
  9. Serve the peach salsa with the cooled cinnamon chips.

Notes

You can adjust the amount of jalapeno to control the spice level. If fresh peaches are not in season, you can use frozen peaches, thawed and drained well.
