Servings: 6 pancakes
Course: Breakfast

Ingredients

  • 1 1/4 cups All-purpose flour
  • 1 Tbsp. Sugar
  • 2 1/2 tsp. Baking powder
  • 1/4 tsp. Baking soda
  • 1/4 tsp. Kosher salt
  • 1 cup Milk
  • 1 large Egg
  • 1 Tbsp. Canola oil or unsalted butter, melted and cooled

Equipment

  • Large bowl
  • Medium bowl
  • liquid measuring cup
  • Rubber spatula
  • Large nonstick skillet
  • Wide spatula
  • Baking sheet

Method

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Make a well in the center.
  2. In a medium bowl or liquid measuring cup, whisk together the milk, egg, and oil until smooth. Pour into the well in the flour mixture and slowly whisk to combine. Using a rubber spatula, stir until mostly smooth (some small lumps are okay).
  3. Heat a large nonstick skillet or griddle on medium heat until a drop of water sizzles. In batches, add scant 1/4-cupfuls of batter to the skillet and cook until the surface is bubbly and the edges are set, 2 to 3 minutes. With a wide spatula, gently flip and cook until the underside is golden brown, 1 to 2 minutes more. Repeat with remaining batter. Serve right away or keep warm on a baking sheet in a 225°F oven.
