Ingredients
  

For the Burrito
  • 3 cups grilled chicken, diced approximately 4 tenderloins or 2 small chicken breasts
  • 2 each burrito tortillas
  • 1/3 cup tomatoes, diced
  • 4 tablespoon chipotle ranch or flamethrower sauce
  • 1/2 each avocado, diced approximately 1/3 of a cup
  • 2/3 cup shredded lettuce
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup crushed tortilla chips or fiesta strips

Method
 

  1. Grill chicken as desired, dice, and set aside. You can also use leftover or rotisserie chicken. Prepare the chipotle ranch sauce if making from scratch.
  2. Dice all other ingredients while the chicken is cooking or resting.
  3. In a large bowl, combine the diced chicken, diced tomatoes, chipotle ranch, diced avocado, shredded lettuce, shredded cheddar cheese, and crushed tortilla chips. Mix everything well to ensure all ingredients are coated in the sauce.
  4. Heat a pan over medium heat with a little oil. Place half of the filling mixture into each tortilla. Fold the opposite sides of the tortilla inward, then tightly roll the tortilla around the filling. Keep the seam side down to prevent unrolling.
  5. When the pan is hot, place a small amount of cheese along the inside seam of the tortilla. Gently place the burrito in the hot pan, seam side down. Cook for 1-2 minutes, or until golden brown on each side. You can gently press the top of the burrito to flatten it slightly for easier eating.

Notes

Any leftover or frozen cooked chicken can be used, including rotisserie chicken. The flamethrower sauce is a yogurt-based chipotle ranch. You can use a store-bought chipotle ranch or creamy chipotle sauce if preferred.
