Easy Breakfast Sandwich

This breakfast sandwich is cheesy, juicy, easy and so delicious! All you need is 5 minutes and 5 ingredients. A one-pan breakfast sandwich recipe.

Ingredients
  

For the Sandwich
  • 1 english muffin cut in half
  • 2 eggs
  • 2-4 slices ham black forest or any kind
  • 1/3 cup cheese finely shredded, Mexican cheese recommended
  • 1 tsp chives finely chopped
  • to taste salt
  • to taste pepper
  • 1 Tbsp olive oil or butter to saute

Equipment

  • Frying pan
  • Toaster

Method
 

  1. Toast the english muffin halves in a toaster.
  2. Heat olive oil or butter in a frying pan over medium heat.
  3. Crack the eggs into the pan. Cook until set, seasoning with salt and pepper.
  4. Add the ham slices to the pan and cook for 1-2 minutes until warmed through.
  5. Place the cooked eggs and ham onto the bottom half of the toasted english muffin.
  6. Sprinkle the shredded cheese and chopped chives over the ham and eggs.
  7. Place the top half of the english muffin over the cheese.
  8. Cover the pan for about 30 seconds to allow the cheese to melt.
  9. Serve immediately.

Notes

To make 2 sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan.
