Method
- Toast the english muffin halves in a toaster.
- Heat olive oil or butter in a frying pan over medium heat.
- Crack the eggs into the pan. Cook until set, seasoning with salt and pepper.
- Add the ham slices to the pan and cook for 1-2 minutes until warmed through.
- Place the cooked eggs and ham onto the bottom half of the toasted english muffin.
- Sprinkle the shredded cheese and chopped chives over the ham and eggs.
- Place the top half of the english muffin over the cheese.
- Cover the pan for about 30 seconds to allow the cheese to melt.
- Serve immediately.
Notes
To make 2 sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan.
