Crunchy Crispy Air Fryer Chicken & Mozzarella Wraps

Ingredients
  

For the Chicken
  • 600 g chicken breast cut into strips
  • 200 g cornflakes
  • 2 eggs
  • 3 tbsp flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 2-4 sprays Vegetable oil spray
For the Wraps
  • 1 round lettuce
  • 6 salad tomatoes thinly sliced
  • 8 white wraps small or 4 large
  • 200 g cheesy singles
  • 1 red onion thinly sliced
Seasoning
  • Flaky salt

Method
 

  1. Preheat your air fryer to 200°C/390°F.
  2. Prepare your salad ingredients and slice the chicken breasts into pieces. Pat the chicken dry with a paper towel.
  3. Place the cornflakes into a ziplock bag over a large chopping board and crush them with a rolling pin or bottle until a coarse breadcrumb texture is achieved.
  4. Add the flour to a plate and season with salt. Whisk the eggs onto a second plate. On a third plate, combine the seasoning (onion powder, garlic powder, and paprika) with the crushed cornflakes.
  5. Coat the chicken pieces in the flour, then the egg, and finally the cornflake mix. Lay the breaded chicken pieces on a tray.
  6. Spray the breaded chicken with oil. Place them into your air fryer, in batches if necessary, without overlapping for maximum crispiness. Cook for 5 minutes at 200°C/390°F, then flip and cook for another 5 minutes.
  7. Once the chicken is fully cooked and crispy, season generously with flaky salt. While the chicken cooks, prepare your wrap using a large tortilla, a layer of lettuce, tomato, red onion, and two cheese slices. Top with a few chicken pieces.

Notes

Use separate hands for wet and dry ingredients when breading chicken. Pat cornflakes onto chicken with the dry hand to avoid mess. Season goujons with salt right after air frying. Cook similarly sized chicken breast pieces in batches to prevent over or under-cooking. Adjust cook time based on the size of your chicken pieces.
