Crock Pot Creamy Cajun Chicken Pasta

A simple and flavorful crock pot recipe for creamy Cajun chicken pasta.

Ingredients
  

For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 packet Cajun seasoning or to taste
  • 1/2 cup chicken broth
For the Sauce
  • 1 can cream of chicken soup 10.5 ounce
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
For Serving
  • 12 ounces penne pasta cooked according to package directions
  • 1/4 cup chopped fresh parsley optional, for garnish

Method
 

  1. Place the chicken pieces in your crock pot. Sprinkle with Cajun seasoning.
  2. Pour the chicken broth over the chicken.
  3. Cover and cook on low for 3-4 hours, or until the chicken is cooked through.
  4. In a separate bowl, whisk together the cream of chicken soup, heavy cream, Parmesan cheese, garlic powder, and black pepper.
  5. Pour the sauce mixture into the crock pot with the chicken. Stir to combine.
  6. Cook on low for another 30 minutes, or until the sauce is heated through and slightly thickened.
  7. While the sauce is heating, cook your pasta according to package directions.
  8. Drain the pasta and add it to the crock pot. Stir to coat the pasta with the sauce.
  9. Serve immediately, garnished with fresh parsley if desired.

Notes

You can adjust the amount of Cajun seasoning to your spice preference. If you prefer a thinner sauce, you can add a little more chicken broth or heavy cream.
