Ingredients
  

For the Chicken Mixture
  • 1 cup shredded cooked chicken
  • 4 tablespoons chipotle adobo sauce
  • 2 tablespoons ketchup
  • 1 tablespoon honey
  • 1 teaspoon vinegar
  • 3/4 cup shredded cheddar cheese low-fat
For Assembly
  • 1/2 cup mashed avocado fresh works, one large avocado
  • 4 slices sourdough bread
  • 4-5 tablespoons mayonnaise
  • 1 tablespoon olive oil or avocado oil

Method
 

  1. In a medium bowl, whisk together the chipotle adobo sauce, ketchup, honey, and vinegar.
  2. Add the shredded cooked chicken, 1/2 cup of the shredded cheddar cheese, and stir well to combine.
  3. Spread mayonnaise on one side of each slice of sourdough bread. Place two slices mayo-side down on a chopping board. Spread the other side of these two slices with mashed avocado.
  4. Divide the chicken and cheese mixture evenly onto the avocado-spread slices. Sprinkle the remaining cheese over the chicken mixture. Top with the remaining two slices of bread, mayo-side up.
  5. Heat a non-stick pan over low heat and add the olive oil. Cook the sandwiches for 3-4 minutes per side, until golden brown and the cheese is fully melted.
  6. Serve the sandwiches warm.

Notes
