Ingredients
  

For the Wings
  • cooking spray
  • 2 pounds chicken wingettes or wingettes and drumettes defrosted if frozen
  • 3 tablespoons vegetable oil
Seasoning Mix
  • 2 tablespoons light brown sugar
  • 1 tablespoon ground paprika
  • 1 teaspoon smoked paprika optional (use more regular ground paprika to substitute)
  • 3/4 teaspoon salt
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/8 teaspoon ground cumin optional
  • 1 pinch cayenne pepper optional

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil, and spray with cooking spray.
  2. Pat the chicken wings completely dry with paper towels. This is crucial for crispy skin.
  3. In a large bowl, toss the chicken wings with vegetable oil until evenly coated.
  4. In a small bowl, combine all the seasoning mix ingredients: brown sugar, paprika, smoked paprika (if using), salt, garlic powder, onion powder, cumin (if using), and cayenne pepper (if using). Mix well.
  5. Add the seasoning mix to the bowl with the chicken wings. Toss until the wings are thoroughly coated with the seasoning.
  6. Arrange the seasoned chicken wings in a single layer on the prepared baking sheet. Make sure they are not overcrowded, as this will steam them instead of crisping them.
  7. Bake for 45 minutes, flipping the wings halfway through, until they are golden brown and crispy.
  8. Serve hot and enjoy!

Notes

For extra crispy wings, you can broil them for the last 2-3 minutes of cooking, watching carefully to prevent burning. If you don't have wingettes, you can cut whole wings into drumettes and flats yourself.
