Ingredients
  

For the Pork
  • 2 tablespoons lime juice
  • 2 tablespoons white vinegar
  • 3 tablespoons chili powder
  • 1-1/2 teaspoons ground cumin
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 cups cubed fresh pineapple
  • 1 small red onion, coarsely chopped
  • 2 chipotle peppers in adobo sauce
  • 1 bottle (12 ounces) dark Mexican beer
  • 3 pounds pork tenderloin, cut into 1-inch cubes
For Serving
  • 1/4 cup chopped fresh cilantro
  • 1 jar (16 ounces) mango salsa
  • 24 corn tortillas (6 inches), warmed
  • Optional toppings: cubed fresh pineapple, chopped avocado, queso fresco

Method
 

  1. Puree the lime juice, vinegar, chili powder, cumin, salt, pepper, pineapple, red onion, and chipotle peppers in a blender. Stir in the beer.
  2. Combine the pork and the pineapple mixture in a slow cooker. Cook on low for 6-8 hours, or until the pork is very tender. Stir to break up the pork.
  3. Stir the cilantro into the mango salsa.
  4. Serve the pork mixture in the warmed tortillas. Top with the salsa and desired optional toppings.
